Broccoli and Brown rice
INGREDIENTS
- 2 cups Organic Broccoli
- 1/3 cup brown rice
- 1 lemon
- 1 tbsp extra-virgin olive oil
- 1 teasp apple cider vinegar
- Salt, Pepper

Make half of your plate with veggies
Bring salted water to a boil. Add 1/3 cup of brown rice to it, and let it cook for 45 minutes on medium heat.
Steam the broccoli to preserve most of the vitamins.
Lemon dressing: whisk together the lemon juice, olive oil and apple cider vinegar.
Once the broccoli and rice are fully cooked, serve with dressing on top.
