Meatballs
INGREDIENTS
- Ground beef from grass-fed cows
- Ground pork from pasture-raised porks
- 2 eggs
- 3 green onions
- Provence Herbs
- Cilantro
- 1 tbsp extra-virgin olive oil
- Salt, Pepper

In a bowl, combine the ground meats and eggs. When well mixed, add the Provence herbs, chopped green onions and cilantro. Season with salt and pepper.
Heat the olive oil in a frying pan. Form balls with the meat (use a glove), and fry them. When thoroughly cooked, put them aside.
Serve with your favorite side-dish.

Enjoy with greens (half of your plate) and starchy vegetables (1/2 cup)
