Butternut squash, Sweet potato and Celery soup

Thoroughly wash and rinse all the veggies.

Peel the sweet potato, and discard the stems on  the celery branches.

Dice the sweet potato in big dives, ad roughly chop the celery.

Chop the onion.

Heat the olive oil in a pot. Add the onion and garlic. Once browned, transfer the butternut squash, sweet potato dices and celery. Let it cook for 5 minutes while stirring gently.

Add boiling water on top and let it simmer for at least 20 minutes or until the veggies are softened.

Transfer everything in a blender.
