Sweet potato hash
INGREDIENTS
- 1 sweet potato
- 1 potato
- 2 onions
- 1 egg
- 1 cup grated cheese
- 2 tbsp extra-virgin olive oil
- 1 pinch of nutmeg
- Salt, pepper

Preheat the oven at 390 F.
Thoroughly rinse the potatoes and peel them.
Roughly grate the sweet potato and potato. Add some salt to help taking the water out.
Finely chop the onions. Heat 1 tbsp of olive oil and gently fry the onions.
Add them on top of the potatoes. Add the cheese and egg. Mix thoroughly. Add the nutmeg.
Transfer everything in a baking pan on parchment paper. Bake for 35-40 minutes.
