The perfect recovery meal: omega 3 and iron to help you fight inflammation and heal after giving birth.
Preheat the oven at 410F.
First, cut 4 parchment papers in squares, twice the size of your fish filet. Spread olive oil on them.
Then, chop the mint. Zest the lime. Mix them together with the coconut cream. Finally, season with salt and pepper and paprika.
Once it’s done, place the cod filets on the parchment paper squares, and add the minted cream, some olive oil, salt, pepper and sprinkle with some lime zests and chopped mint.
Finally, close the papillote and cook them for 15 minutes depending on the width of your filet.
When fully cooked, serve with a mixed salad and some steamed broccoli.
