Preheat your oven at 355 F.

Thoroughly wash and rinse all the veggies.

Peel the carrots and sweet potato.

Slice the zucchini, carrots and bell pepper.

Dice the sweet potato.

Chop the onion and garlic.

Transfer everything on a parchment paper in a sheet-pan. Season with salt, pepper and olive oil. You can also add some Provence herbs.

Bake for 15-20 minutes.
